Champagne Ivernel Brut– Aÿ, Grand Cru
The Ivernel family is one of the oldest wine families from the historic village of Aÿ, located just east of Épernay. Aÿ is considered one of the finest terroirs in Champagne, with vineyard land among the most prestigious and valuable in the world.
The family's history reaches back to the Renaissance, when they were pressing and storing still wines for King François I (1494–1547). In recognition of this legacy, the Ivernel family carries the king's emblem — the crowned salamander — as part of their heritage. This symbol is also found throughout the Loire Valley, adorning the castles François I built, including Chambord, Blois, and Amboise. The king was also the patron of Leonardo da Vinci, who spent his final years at the Château d'Amboise under François I's protection.
This royal connection, combined with the exceptional terroir of Aÿ, gives Ivernel Champagne a unique story and timeless prestige.
Champagne Ivernel – Product Description
A distinguished cuvée crafted from the classic Champagne varietals — 45% Chardonnay, 45% Pinot Noir, and 10% Pinot Meunier — sourced from Grand Cru and Premier Cru vineyards. Vinified with precision and aged for a minimum of three years on the lees, this Champagne develops remarkable finesse and depth.
The bouquet opens with fresh citrus and white peach, evolving towards notes of honey, almond, and brioche. On the palate, it is both vibrant and structured, with a fine mousse and a lingering mineral finish. Balanced, elegant, and complex, Champagne Ivernel is a perfect expression of Aÿ's historic terroir.
Food Pairing: Ideal as an apéritif, it also shines alongside refined starters, shellfish, and delicate seafood dishes. Its freshness and structure complement white meats and light poultry preparations, while its complexity makes it an excellent companion for gourmet cuisine.
